De Búrca’s Traditional Butcher Shop is the husband and wife team Seán Bourke and Sarah Ní Shúilleabháin. He’s the butcher and she’s the ex-scientist apprentice butcher, blogger, photographer, cook, taste-tester, recipe-writer, sausage maker, spice mix blender…. and they’re both the parents of two food critics AA Gill would be proud of.

De Búrca’s opened in 2014 and is a whole animal butcher shop that is striving towards 100% sustainability in terms of meat. This would mean that they would only use whole, slowly reared, grass fed, local animals, nose to tail in their products in the shop. They are working on these products to allow them to do this, the first of which are their sausages. They were given two titles of Grand Prix d’Honneur for three of their sausages at the CFGDA (Commanderie des fins Goustiers du Duche Alencon) in France in 2015.

    • Hi Lynsey – So nice of you to leave a comment! We are massive fans of The Ginger Pig and have been following you for the longest time! The Ginger Pig is the last word for provenance and we love your books. We still have to visit, but as you can see, we’ve been a bit busy lately. Are you a butcher or behind the scenes? I’m an apprentice at the moment, with Seán training me (that can get a bit colourful sometimes!) Which Ginger Pig shop are you in and we’ll make sure to visit when we’re over – hoping to make it before summer. As for the beautiful website… it’s just a wordpress blog that we built ourselves.
